Scoop out the avocado flesh and spread it on bread 12 avocado slices each slice.

Spread artichokes, sliced and pitted olives, tomatoes, and red pepper evenly across the toast.

Then, to make it even better, sprinkle basil leaves on top.

FIESTA CHICKEN RICE BOWLS

Here’s how to prepare fiesta chicken step-by-step:

Ingredients

  • 1 tbsp olive oil
  • chicken breasts (about 3-4 medium-sized breasts)
  • chili powder
  • salt
  • garlic powder
  • 1 tsp cumin
  • 1/2 cup corn
  • 2 small red onions, sliced
  • red pepper, diced
  • green pepper, diced
  • yellow pepper, diced
  • 3/4 cup fresh salsa
  • 1/3 cup cilantro, chopped
  • 1/4 cup feta cheese (optional, divided)

Rice

  • 1 cup dry brown rice
  • 2 cups water
  • 1 tsp butter

While you prepare the chicken and vegetables, start the rice in a rice cooker.

Heat olive oil in a large frying pan over medium-high heat. Stir in the diced chicken for a few minutes, until it is lightly cooked. Toss in your spices (chili powder, cumin, and garlic powder), then simmer for another 5 minutes.

Sauté the vegetables (red onion, corn, and bell peppers) for a few minutes more. Combine the cooked brown rice, salsa, and cilantro in a mixing bowl.

Enjoy with a sprinkling of feta cheese (an optional garnish).

BAKED CHICKEN, BROCCOLI, AND SWEET POTATOES

  • 2 sweet potatoes
  • (2) cups of broccoli
  • 3 medium sized chicken breasts
  • 3 tablespoons olive oil
  • salt and pepper

Broccoli should be cut into bite-size pieces and put out on half of the baking sheet. Cut the chicken into bite-size pieces and season with salt and pepper to taste. Drizzle olive oil over the broccoli and chicken.

Place the diced sweet potatoes in a separate pan, drizzle with olive oil, and season with salt.

Remove the chicken and broccoli from the oven after 12 to 15 minutes at 425 degrees. Allow another 15 minutes for the sweet potatoes to cook.

Serve the chicken, broccoli, and sweet potatoes in four equal portions. A quarter of the pan is used for each serving.

  • 10 large shrimp, peeled and deveined
  • 1 carrot, chopped
  • 1/2 cup broccoli florets
  • 1 Tbsp coconut oil
  • 1 onion, chopped
  • 1/3 cup peas
  • 1 mushroom, chopped

  • In a large pan, heat the coconut oil until melted and sautée the onion until fragrant. Add the coconut milk, curry paste and lemon grass. Cook, while consistently stirring the curry paste into the coconut milk until a smooth consistency is achieved. Let the curry cook for 2-3 minutes, then remove the lemon grass.

  • Add the peas, broccoli and shrimp. Cook for 2-3 minutes then add the carrot and mushroom. Now cook for 1-2 more minutes and then turn the heat off. Sprinkle chopped cilantro on top and serve with cooked rice or quinoa.

DRINKS

Make sure you’re getting plenty of water. If you’re craving something sweet or a cup of coffee, drink some water first to be sure you’re not thirsty.
